Recipes for Delicious Desserts Featuring Favorite Fall Fruits

Is there anything better on a cool Fall day than coming into the house and smelling the aroma of the season's best fruits? Well, feeling the warmth of the oven might be a close second. Here are some recipes to enjoy this Fall and Winter (or anytime of the year), using some of our Fall favorites - pears, apples, and blackberries. Grab a cup of coffee, hot tea, or hot chocolate and enjoy a real treat.


SNAPPING CRANBERRY-PEAR CRISP

FRUIT MIXTURE:


1 can whole berry cranberry sauce
2 tbsp flour
5 med pears, peeled and sliced*


TOPPING:


1 cup coarsely crushed gingersnap cookies
1/2 cup all-purpose flour
2 tbsp brown sugar
1/4 cup butter, melted


Preheat oven to 375 degrees.


For the fruit mixture, combine cranberry sauce and flour in a medium mixing bowl; mix well. Add the pear slices, toss to coat evenly. Place fruit mixture in a baking dish and set aside.


For the topping, in a small mixing bowl, combine cookie crumbs, flour, brown sugar, and butter; mix well. Sprinkle the crumb mixture over the fruit mixture. Bake for 30 to 35 minutes or until the pears are tender and the topping is golden brown.
Note: This is just as good when you substitute apples for the pears.


Oregon's Blackberry-Apple Crunch

Filling:


4 cups sliced Granny Smith apples
2 cups fresh blackberries (may use frozen but do not thaw)
3/4 cup sugar


Topping:


3/4 cup brown sugar, firmly packed
3/4 cup all-purpose flour
3/4 cup rolled oats
1/2 cup chopped walnuts
1/2 cup butter
1/2 tsp cinnamon


Preheat oven to 350 degrees.


In a large bowl, combine the apples, berries, and sugar. When well combined, pour mixture into a 9 x 13 x 2-inch baking pan or dish.


In another large bowl, combine the brown sugar, flour, oats, walnuts, butter and cinnamon; blend together using your fingers. Sprinkle over the top of the fruit. Bake at 350 degrees for approximately an hour or until the top is brown and fruit is bubbly.

Don't you just love mint? As summer approaches I find it to be a delightful and refreshing herb to add to some of my favorite dishes. Mint also adds refreshing and delicate touch to many drinks and cocktails. Don't you just like to see the green minty leaves in your drink?!
Today I want to share with my readers a true delicacy of minty recipes: My favorite Peas Mint Recipes - Savory Jade Chicken - ooH La LA!! Slice of Heaven Mint Dessert and The Midnight in Sicily Drink

2 cups fresh or frozen peas



2 tbs shallots, minced (abot 1 large shallot)
1 tbs olive oil
1 teaspooon soy sauce or Tamari Gluten Free Soy Sauce
handful fresh mint (minced)
1. In heated saute pan, add olive oil and shallots. Cook for about 1 minute or until shallots are soft and fragrant .

2. Add peas, cook for about 1 minute or until peas are tender. Add soy sauce. Cook for about another 30 seconds. Remove from heat .

3. Pour peas into serving bowl and toss with fresh minced mint leaves.

4. Serves about 2-3.

The texture and flavor contrast between the fried and fresh mint is simply delicious. This recipe does not use much oil, and it is superquick.


(Makes 4 servings)

1 tablespoon soy sauce
2 teaspoons cornstarch
1 pound boneless, skinless chicken breast or thigh meat, cut into 1-inch pieces
1/4 cup vegetable oil
3/4 cup lightly packed fresh mint leaves
1 red jalapeño chili, thinly sliced
1/4 cup Chinese rice wine or dry sherry
1 tablespoon chili garlic sauce
2 teaspoons sesame oil

•Brownie base:
•· 4 tbs. butter
•· 2 oz. unsweetened chocolate
•· 1 cup sugar
•· 2 eggs
•· 1/8 tsp. salt
•· ½ cup plus 2 tbs. flour
•· 1/3 cup chopped Andes candies
•Chocolate Ganache:
•· 9 oz. semisweet chocolate, chopped
•· 1-cup heavy whipping cream
•Filling:
•· 12 oz. cream cheese, room temperature
•· 6 tbs. butter, room temperature
•· 2 cups white chocolate chips
•· 1 tbs. solid vegetable shortening
•· 3/8 tsp. peppermint extract
•· 3-4 drops green food coloring (optional)
•· 1/3 cup chopped Andes candies

Directions
1.For brownie base, preheat oven to 300 degrees.
2.Coat a 9-in. spring form pan with vegetable oil spray.
3.In a double boiler or microwave, melt butter and unsweetened chocolate.
4.In a medium bowl, beat sugar and eggs. Gradually add chocolate mixture. Mix in salt, flour, and vanilla; add Andes Candies mints.
5.Pour batter into prepared pan and bake for 20-30 minutes or until toothpick inserted near center comes out clean.
6.Cool completely.
7.Meanwhile, for Ganache, place chocolate in a small bowl. In a small saucepan, heat cream and bring just to a boil.
8.Pour hot cream over chocolate and whisk until smooth. Allow to cool slightly before using.
9.For filling, in a medium bowl, combine cream cheese and butter and mix to combine.
10.In a double boiler or microwave, melt white chocolate and shortening and mix well.
11.Add to cream cheese and beat just until smooth.
12.While mixture is beating, add extract and food coloring, if desired. Fold in Frango mints.
13.Smooth filling over top of cooled brownie base and chill until firm, about two hours.
14.Top with Ganache and chill until firm; 30- 60 minutes.
15.To serve, remove sides of spring form pan, garnish as desired.
16.Cut into small wedges.

1 oz. Tanqueray Gin - (more)
1/2 oz. Sweet and Sour Sauce Blood Orange Agrodolce - (more)


Instructions
Combine ingredients in an ice filled cocktail shaker and shake for 20 to 30 seconds, or until well chilled. Double strain through a fine meshed strainer into a chilled cocktail glass. Garnish with a flamed blood orange rind.

Tips to Keep Kids Healthy This Spring from Ashok Wahi

As the warm weather approaches and kids feel the cool breeze on their skin, they may quickly come down with a case of spring fever. Health and Wellness Expert, Ashok Wahi, believes that while spring is the perfect time to engage in some exciting, new family activities, it is also a time for parents to pay a little extra attention to making sure kids are safe, healthy and focused. Wahi, a renowned author and prominent inventor, has compiled five tips that will give parents peace of mind while allowing their kids to get outside and enjoy the season.


1. Protect kids from spring allergies. Springtime activities may increase a child’s exposure to allergens which can spark symptoms such as sneezing or itchy, watery eyes. Wahi suggests trying a drug-free alternative that won’t make your child drowsy like other over-the-counter products. Wahi invented the NasalGuard® technology, which is currently being marketed in the U.S. and Canada as Chloraseptic® AllergenBlock®. 2. Keep kids focused on school until summer vacation through yoga. As the sun is shining and birds are chirping children may become more interested in what is going on outside the classroom windows compared to what is on the blackboard. Wahi, author of 14 different yoga books including Yoga for Kids, suggests that parents should consider the positive impact that yoga can have on keeping children focused both in school and after.



3. Prevent insect bites. Avoid having your child suffer from itchy, painful bug bites by using the appropriate insect repellent. Parents should only use products that are approved for children and should follow the manufacturer’s instructions for removing the repellent when you return indoors.



4. Ensure safe sun exposure. The warm weather will inevitably result in increased sun exposure for children. To ensure safe sun exposure for their kids, consider protective clothing, applying sunscreens with UVA and UVB protection and having kids wear sunglasses. Even when it’s cloudy a child can be sunburned and certain insect repellents can lower the effectiveness of suntan lotion.





5. Practice water safety with children. Beyond never leaving children unsupervised around water, parents should also take some additional precautions to ensure safety around water. Wahi suggests talking to children about the dangers of playing in canals and rivers and teaching the importance of wearing approved safety devices while boating or tubing.

4 parts apple juice
3 parts vodka
½ part lemon juice
½ part Galliano

After a few of these, your temperature will rise and your skin will take on a jaundiced glow. Mix everything in a highball glass then fill it to the brim with ice. Garnish with a wedge of granny smith apple.

1 part whiskey
1 part peach liquor
1 part amaretto
1 part sweet and sour mix
1 part pineapple juice

You don’t remember, but when you were four Grandma innocently told you Turkey’s are a kind of Big Bird. You went ballistic – screaming and crying over your favorite friend on Sesame Street. The only way anyone in the house could stop from strangling you was to down a couple of these.

Mix everything in a cocktail shaker full of ice. Shake it like a baby rattle. Nope, not soothing enough for the kid. Well, pour it all in an ice filled highball glass. Go ahead and double up on the recipe. You’re not the only one who’ll need one.

Simple to make, this drink is tangy and refreshing, with a sharp bite to it.

•Ice cubes
•2 measures of pineapple juice
•2 measures of orange juice
•1 1/2 measures of lemon juice
Into a cocktail shaker half filled with ice, pour the pineapple juice, orange juice and lemon juice. Shake well and strain into an old fashioned glass. Decorate with a lemon wedge or orange wedge.

Ingredients

•15 thick-skinned lemons
•2 - 750 ml- bottles liqueur
•4 1/2 cups granulated sugar
•5 cups water


Methods/steps
Wash the lemons in hot water before you start. Remove the peel with a vegetable peeler, removing all white pith on the back of the peel by scraping with a knife, and put the peels into a 4-quart Mason jar. Add 1 bottle of liqueur and stir. Cover the jar, date it, and put it to rest in a dark cabinet at room temperature. After 40 days, take out the liqueur-lemon mixture. In a saucepan set over high heat, stir the sugar and water together and boil for 5 minutes. Let the sugar syrup cool completely in the pan, about 10 minutes. Add the sugar syrup to the vodka-lemon mixture along with the second bottle of vodka. Stir well to combine. Replace the cover on the jar and note the finish date. Return it to the dark cabinet and store for 40 more days. At day 80, remove the limoncello from the cabinet. Strain the mixture and discard the lemon peel. Pour into clean, unused bottles with caps or decorative corked bottles. Store the bottles in the pantry, but put one bottle at a time in the freezer until ready for use

Dear friends Easter is almost here and I'm thinking chocolate. I guess as a little girl I always looked forward to Easter knowing I would receive many Easter Bunny chocolates which I really couldn't resist, well I guess all kids think alike. As much as I'd still love to receive chocolate bunnies, instead I guessI'd prefer to enjoy a perfect Easter Cocktail : "The Easter Bunny Cocktail". This cocktail is all about chocolate cocktail with a cherrylicous twist.

1 1/2 oz. Dark Creme de Cacao
1/2 oz. Vodka
1 tsp. Chocolate Syrup
1 tsp. Cherry Brandy

Shake creme de cacao and vodka with ice. Strain over ice in an old-fashioned glass. Top with a float of chocolate syrup and cherry brandy

LWC - Spring in the Zucchini

Spring in the Zucchini ! As spring is blooming so are zucchini. They are a very popular vegetable but not a favorite to many. I love zucchini therefore I thought I'd share a few delicious recipes that are sure to be tempting: Salad - Entree Dish and Dessert .







Quick and Simple Zucchini Salad













Cook sliced zucchini in salted water, then drain and allow to cool. Dress them with olive oil, anchovies, oregano and pepper.











Zucchini Loaf


Ingredients

1lb. 12 oz. zucchini
1/2 onion
1 clove garlic
8 tbsp. extra virgin olive oil
1 bunch of parsley
3 medium potatoes
4 eggs
4 tbsp. grated Parmesan cheese
nutmeg
marjoram
salt
pepper
breadcrumbs




Preheat oven to 380 degrees. Clean the zucchini and cut them in thin rounds. Finely chop the onion and garlic. Heat the oil in a deep frying pan and lightly brown the onion and garlic. Add the zucchini. Mix well. Cover the pan and cook over low heat for about 15 minutes. Chop the parsley and sprinkle over the zucchini. Mix well and remove from the heat. Pour the zucchini in a large soup bowl. Boil, drain, peel and puree' the potatoes, then add them to the zucchini. Add the eggs, parmesan, a pinch of each nutmeg and marjoram. Blend well. Season with salt and pepper. Smear the bottom and sides of a baking dish with olive oil and sprinkle with breadcrumbs. Pour the zucchini-egg mixture and baste with Olive oil. Bake at 380 degrees fro about 40 minutes. Serve ( can be served warm or cold)
















Summer Penne with Apple Aroma


Ingredients for 6


1lb. penne
3 zucchini
2 onions
2 tomatoes
2 red apples
1/2 sweet pepper
6 2/3 tbsp. extra virgin oilve oil
10 small basil leaves
1 tbsp. chopped parsley
salt
pepper





Clean the zucchini, onions, tomatoes, apples and sweet pepper and cut into small cubes. Put the cubes in a blender ad reduce to puree' adding oil to secure a creamy consistency. Season with salt and pepper. Chop the basil and parsley and blend with puree. Pour the mixture into a large soup bowl. Cook the pasta until al dente. Set aside several tablespoons of water, drain the penne and combine with the sauce. stirring in a few spoons of water. Serve immediately.
















Zucchini Cake




Ingredients

2lb. zucchini
1 oz. raisins
2 tbsp. sugar
salt
1 tbsp pine nuts
1 tbs. candied citron
1 oz. cooking chocolate
1 oz. dry sweet biscuits ( plain biscotti)
2tbsp. breadcrumbs
6 eggs
butter




Heat oven to 350 degrees. Cut the squash in thick slices and bake them in the oven until they are soft. Remove the skins and pass the zucchini through a sieve or food mill. Soak the raisins in a bit of warm water. Add the sugar, pinch of salt, the raisins and pine nuts to the puree. Cut the citron and chocolate into small pieces, crumble the biscuits and add them to the puree, along with the breadcrumbs and eggs. Blend well. Cover the bowl with a towel and let the mixture sit for about 30 minutes.





Butter a mold with a well in the center (bundt pan) and fill it with the batter, which should come up virtually to the rim. Put the mold in a pan partly filled with hot water. Put the cake in the oven ( 350 degrees) and bake for 40 minutes. Remove from the oven and allow the cake to cool before removing it from the mold.

Tip: the cavity can be filled Zabaione cream or any other creamy preparation.

LWC - Pom Cocktails and Drinks

I love pomegranate because of it's tangy and sweet taste and also for it's health benefits.


Pomegranates are available everywhere from grocery stores to fruit stands and the highly antioxidant juice is also available in many supermarket chains worldwide. It's dark red juice is perfect to mix with drinks and also to add to your favorite recipes.



Every time I host a party I always enjoy serving The Pomegranate Champagne Cocktail, my friends and family always find this cocktail deliciously chic!



In this weeks coffee I thought I'd share with shesdaily.com friends and readers, a few of my many favorite pomegranate drinks and cocktails which includes the Pomegranate Champagne Cocktail.



If you enjoy Mojito's then you'll love the Pomegranate Mojito!! I'm sure your going to love Steve Calabro's video from EatDrinkorDie.com, on how to make this wonderful drink.
For those who prefer non alcoholic drinks I've found the perfect pomegranate mocktail with a sparkling touch.

2 oz Silver Tequila
1 oz PAMA® pomegranate liqueur
1/2 oz pineapple juice



In a tall mixing glass combine all ingredients. Add ice and shake vigorously. Strain into a martini glass rimmed with sugar.

Ingredients:
1 1/2 Oz Bourbon
1 1/2 oz pure Pomegranate juice
1/2 tsp superfine sugar
2 dashes Angostura Bitters
Directions:
Combine all ingredients in a cocktail shaker and shake until the sugar has dissolved. Strain into a chilled martini glass and serve.

•1 1/2 oz Oval Vodka
•1 oz Campari
•1 oz Hiram Walker Pomegranate Schnapps
•1 oz pomegranate juice
•1/2 oz simple syrup
•lemon slice for garnish




Preparation:
1.Combine ingredients in a cocktail shaker filled with ice.
2.Shake vigorously.
3.Strain into a chilled cocktail glass.
4.Garnish with a lemon slice.

Ingredients
1 cup pomegranate juice
1 tablespoon sugar
1 1/4-inch-thick slice fresh ginger


4 tablespoons fresh orange juice
1 teaspoon Cointreau or other orange liqueur
1 750-ml bottle brut Champagne, well chilled

Preparation;Boil first 3 ingredients in heavy small saucepan until syrup is reduced to 1/3 cup, stirring often, about 10 minutes. Cool.

Pour 4 teaspoons pomegranate syrup, 1 tablespoon orange juice, and 1/4 teaspoon Cointreau into each of four 6-ounce Champagne flutes. Fill each with 2/3 cup Champagne.

Ingredients
11/2 cups Pom Juice

1 Cup Pear nectar

1/4 Cup Grand Marnier

1 bottled chilled champagne

Steps
Place first three ingredients into a large glass pitcher.

Slowly add

chilled champagne to the pitcher and you have an instant soiree!

Note: I prefer Bionaturae Organic Pear Nectar

Ingredients
1 tablespoon pomegranate juice (freshly squeezed is best, but good-quality bottled juice will do fine)
3/4 cup sparkling apple cider, chilled
pomegranate seeds (optional)
Directions
1Pour sparkling cider into a champagne flute.
2Top with pomegranate juice.
3Garnish with a few pomegranate seeds, if desired. Serve and enjoy!

Learn from Amoy first-hand, how to achieve this ethereal and wind-swept, yet effortless look:



Step 1: Begin by applying the René Furterer Volume Mousse from root to end to achieve texture.



Step 2: Working on dry hair, use a 1-2” curling iron to create a soft wave through the crown. Spray a brush with RF Dry Shampoo to create volume, after adding Amoy Couture Hair clip-on extensions to add fullness and length to the hair.



Step 3: Using a comb, brush back the hair at the root, sweeping the hair to one side and creating a long braid. Continue to comb the braid back to create lose flyaway’s for a soft, renaissance look.



Step 4: After the application of makeup, put on the look’s final touches by spraying the hair with RF Finishing Spray, securing any loose hairs.

Thank You Notes For Holiday Gifts
