Women's Day ( Festa Della Donna)
is celebrated each year in
Italy on March 8 and it is symbolized by the mimosa flower. On Woman's day men offer women the mimosa flower as symbol of love and friendship.

Since mimosa's seems to be the highlight of month I thought I'd share with my readers two great recipes: The Mimosa Cocktail and The Mimosa Cake.


The Mimosa Cocktail known to be a favorite cocktail and a`very popular one as well, usually it is served in special occasions such as Mother's day Brunch. I don't see any reason not to have a mimosa cocktail in honor of "Woman's Day". I find it to be deliciously chic.

La Torta Mimosa or the Mimosa Cake is a very popular dessert in Italy. A delicate sponge cake filled with chantilly cream is a true delicacy to anyone's palate, it is elegant and it is sure to be the star attraction to any party. The cake topping resembles the mimosa flower.

Ingredients:
1 cup fresh blood orange juice (from about 6 blood oranges), or 1 cup fresh juice from regular juice oranges
1 bottle Champagne, chilled
Orange slices and mint sprigs for garnish (optional)

Make it a Gran Mimosa Cocktail by adding Gran Marnier
or for the non alcoholic version try The Mimosa Mock tail by substituting champagne with 7-up or sprite.


Instructions:
Pour 1/4 cup juice into each of 4 champagne glasses. Slowly add champagne (or regular or diet 7-up or gingerale, if using). Garnish each champagne glass with an orange slice and mint sprig, if desired. Serve immediately.

Ingredients

For sponge cake
•2 ½ oz all-purpose flour
•2 ½ oz potato starch
•5 oz sugar
•6 eggs
For chantilly cream
•2 cups milk
•2 eggs
•2 egg yolks
•3 ½ oz sugar
•1 oz all-purpose flour
•1 lemon zest
•½ stick vanilla
•7 oz cream
•1 ¾ oz powdered sugar
For syrup
•1 cup water
•½ cup Kirsch (dry cherry liqueur)
•3 oz sugar
Preparation
1 hour and 30 minutes preparation
